b'Brodetto Di Mare(Italian Seafood Soup)Prep time: 20 minThis is one of my favourite seafood dishes. Unlike Cook time: 15 min other seafood soups and stews like bouillabaisse Serves 2 and chowder, which can be quite complicated and time consuming, this dish is relatively quick, 2 handfuls of clams, washed insimple and delicious. This dish is also extremely cold water versatile. It is light enough to be enjoyed in the summer months and equally warming through 2 handfuls of mussels, outerthe depths of winter.shell cleaned and beards removed. Remove the skins and the seeds with your fingers and reserve the 1 medium squid, scored andbroken tomato flesh in a bowl.sliced into random shapes Heat garlic, anchovy and the chilli with a little olive 200g of blue eye, ling, snapper,oil over a medium heat in a pot large enough to monkfish or similar whitecomfortably hold all of the ingredients.fleshed fish cut into 2cm cubes Once garlic has softened add fish, clams, mussels 8 large green king prawns,and prawns, then saut over a high heat while stirring peeled and deveined for 1 minute or so before adding the tomato flesh. Stir the tomato through, then add squid, followed by the 6 tomatoes wine.2 cloves garlic, peeled andPlace the lid on the pot. After a minute have a look finely sliced in the pot. As the clams and mussels open remove them using tongs and place them in a bowl to the 2 handfuls of fresh flat leafside. As the squid becomes white also remove and parsley, chopped add to the bowl.3 anchovy fillets By this stage all of the seafood should be cooked, the 1 red chilli, finely sliced tomato should have broken down and there should be a nice broth as a result of the seafood.Extra virgin olive oil Place the clams, mussels and squid back into the pot, 1/2glass of pinot grigio or otheradd parsley and a little splash of extra virgin olive oil.dry white wine Serve immediately by itself or with some grilled bread Lemon wedges and a squeeze of lemon.Enjoy. 109'
