A bit of effort for (only 1 if making pancakes) a delicious return. It can be simplified by turning it into pancakes.3/4cup self raising flour, sifted Separate egg yolks from whites. Whip egg whites 1 or 2 star anise, ground until stiff peaks form.1 cup milk or buttermilk Gently mix remaining waffle ingredients (including egg yolks). Do not over mix or the 1 tbsp butter melted waffles - or pancakes - will be tough.1 tbsp white sugar VERY gently fold the egg whites through the Pinch of salt batter.Butter up a heated waffle iron (if using) and pour on enough batter for one and cook, turning to Topping brown the opposite side. Repeat to make several 4 fresh figs, cut in half waffles.Butter for grilling In the meantime, melt butter in a frying pan. Dip the cut side of the figs into sugar and place 1 /cup balsamic vinegaronto frying pan cut side down. Cook until the cut 4 surface is caramelised. Just prior to lifting them 2-4 tbsp caster sugar, tooff, douse with the balsamic and lemon juice, and taste cook off the acidity, add sugar. If the balsamic evaporates too quickly, add more but ensure 1/2 lemon, zest & juice acidity is cooked off. Dust figs and syrup with Plain Greek yoghurt lemon zest, then lift out figs before they overcook.Pistachios roasted & lightlyServe figs over waffles and drizzle with syrup. Add crushed (optional) a dollop of yoghurt and nuts.14'
