You wont be disappointed.6 skin-on chicken thighsPreheat the oven to 170C. Layer the cannellini (bone out) beans across the bottom of 1 or 2 oven-proof casserole dishes. 6 cloves garlic, whole peeled Chop the tomatoes into quarters and layer on top 400g potatoes of the beans.1tbs crushed chilli flakes Peel potatoes and chop into 1-inch chunks. Place 1 handful basil leaves the chicken thighs on top of the tomatoes and nestle the potato chunks in between them. Extra virgin olive oil Add the garlic cloves to any gaps. Top with a Salt and pepper sprinkle of chilli flakes, a generous drizzle of olive oil and fresh basil.Lemon zest to tastePlace in the oven for 1 hour, then remove and spoon some of the liquid in the bottom of the dish over the chicken.
