You wont be disappointed.canned1/ 2kg baby tomatoesPreheat the oven to 170C. 6 skin-on chicken thighsLayer the cannellini beans across the bottom of 1 or 2 (bone out) oven-proof casserole dishes. 6 cloves garlic, wholeChop the tomatoes into quarters and layer on top of peeled the beans.400g potatoes Peel potatoes and chop into 1-inch chunks. Place the 1 tbsp crushed chilli flakes chicken thighs on top of the tomatoes and nestle the 1 handful basil leaves potato chunks in between them. Add the garlic cloves to any gaps. Top with a sprinkle Extra virgin olive oil of chilli flakes, a generous drizzle of olive oil and fresh Salt and pepper basil.Lemon zest to taste Place in the oven for 1 hour, then remove and spoon some of the liquid in the bottom of the dish over the chicken.
