Fry the chicken on a medium-high heat for approximately 5 minutes to seal in the juices.Turn the chicken pieces and add sauce and seasoning. Mix well. Turn the heat down for a gentle fry. Add the capsicum and onion mix. Fry for 5 minutes on medium heat, until the capsicum and onions are soft and the chicken is thoroughly cooked to golden brown.In the meantime, commence cooking the vegetable stir fry and rice. The vegetable stir fry can also be fried in a pan or wok, but for speed, I prefer using the microwave. Place the stir fry in a bowl and heat on high for 3 minutes.Drain any excess fluid if the stir fry has been frozen, then add sweet chilli sauce. Return the bowl to the microwave for another 2 minutes on high. Try to synchronize completion with the chicken on the stove.Heat the rice in the microwave for 11 / 2minutes.Heat the tortillas in the microwave for around 10 seconds.Place a tortilla onto a warm plate, spread the chicken and capsicum mix onto it, and fold. Place the stir fry next to it and add more sweet chilli sauce if desired. Serve the rice in a warm side bowl, and youre good to go.77'
